Dairy Free | Gluten free option

Serves 2
Prep: 5 minutes
Cook: 15 minutes

Ingredients.

1 C oats*
1 spotty banana
2 eggs
1 tsp cinnamon
½ tsp nutmeg
½ tsp cardamom
1 tsp baking powder
2 tbsp maple syrup
½ C soy milk
Fresh fruit & maple syrup to top

Method.

1. In a blender, blitz together the oats, banana, eggs, spices, baking powder, maple syrup and soy milk until smooth.

2. Heat an oiled pan over medium heat and cook each pancake until golden on both sides.

3. Serve with fresh fruit and maple syrup!

*Gluten free: Swap regular oats for gluten free oats.

 

 

Vegetarian option | Gluten free option

Serves 2
Prep: 10 minutes
Cook: 15 minutes

Ingredients.
1 C fresh basil
2 C fresh kale
3/4 C extra virgin olive oil
2 garlic cloves, peeled
½ C pine nuts
½ C parmesan cheese
1 tsp salt
100g linguine pasta
*Optional: 100g chicken breast

Method.

1. Bring a sauce pan full of water to boil and cook the linguine pasta for 8 minutes, or until cooked through. Drain and rinse.

2. *Optional: Cut your chicken breast into cubes and fry in a pan with olive oil and garlic until cooked and crispy.

3. In a high-speed blender, blitz together the basil, kale, oil, garlic, pine nuts, parmesan cheese and salt until smooth.

4. Add the pasta and pesto into a pan and mix until heated.

5. Garnish with extra parmesan, pine nuts, salt, and pepper.

*Gluten Free: Swap regular linguine pasta for gluten free pasta

 

 

Vegan

Serves 6
Prep: 20 minutes
Cook: 1 hour

Ingredients.

Filling:
4 medium sized apples (green or red both work)
Juice of ½ a lemon
1/3 C raw sugar
1 tsp ground cinnamon
Pinch of nutmeg
1 tbsp corn flour
1 tbsp maple syrup

Topping:
½ C rolled oats
¼ C almond meal
¼ C raw sugar
½ C plain flour
¼ C raw almonds
Pinch of salt
½ tsp cinnamon
¼ C extra virgin olive oil

Method.

1. Preheat oven to 180 degrees Celsius.

2. Prepare the apples by peeling, removing the cores and slicing.

3. In a large mixing bowl, combine apples with lemon juice, raw sugar, ground cinnamon, nutmeg, cornflour, and maple syrup.

4. Transfer mixture to a baking dish.

5. In a separate bowl, mix all topping ingredients together.

6. Pour evenly over the apples.

7. Bake for 1 hour, or until the filling is bubbling, apples are soft and the crumble on top is golden and crisp.

8. Allow to cool for 30 minutes and then serve with cream or ice cream!
