This colourful tuna Nicoise salad will make the most of staple cupboard ingredients - enriched with goodness, super filling and easily varied with your choice of protein.

2 small new potatoes
100g green beans
1 tsp extra-virgin olive oil
2 tsp lemon juice
1 tsp wholegrain mustard
25g mixed salad leaves
95g can tuna in oil, drained, flaked
1 hard boiled egg, peeled, quartered
60g cherry tomatoes, halved
1. Boil, steam or microwave potatoes until tender, adding beans for last minute of cooking time. Set aside to cool. Cut potatoes into chunks. Combine oil, lemon juice and mustard in a small bowl.
2. Combine potato, salad leaves, tuna, egg, tomatoes and beans in a medium bowl. Cover and refrigerate until needed. To serve, add dressing and gently toss to combine.
