Ingredients.
½ bunch broccolini, cut into 5cm lengths
25g baby spinach leaves
½ cup (95g) cooked quinoa, warmed
1 egg, poached
¼ small avocado, thinly sliced
1 tsp olive oil
Method.
1. place broccolini in a steamer and steam for 3 minutes or until just tender. Add the spinach leaves for last minute of cooking time. Drain.
2. place quinoa in a bowl, top with the steamed vegetables, a poached egg and sliced avocado. Drizzle with olive oil and season with salt and pepper.
