Smoked salmon, broccolini & spinach eggs.

ingredients.

½ bunch broccolini, trimmed, cut into 4cm lengths

2 eggs

1 tbs milk of choice

1 teaspoon extra-virgin olive oil

30g baby spinach leaves

35g sliced smoked salmon

Squeeze of lime juice, to serve

 

method.

1 Steam, boil or microwave broccolini in until just tender. Drain.

 

2 Whisk the eggs and milk together in a medium size bowl. Heat the oil in a frying pan over a medium heat. Cook the broccolini and spinach, stirring until spinach is just wilted, remove from pan and set aside.

 

3 Return pan to a medium-low heat. Add the egg mixture gently stir until the eggs are almost set. Add broccolini and spinach, gently stir to combine, season to taste with sea salt and freshly ground black pepper. 

 

4 Serve eggs immediately with the smoked salmon, and a squeeze of fresh lime juice. 

 

TIP: option to serve with a slice of wholegrain sourdough bread.
