smoked salmon, avocado & roasted sweet potato salad

ingredients:
125g sweet potato, peeled, cut into cubes
30g baby rocket leaves
60g grape tomatoes, halved
50g snow peas, sliced
¼ avocado, sliced
50g sliced smoked salmon
2 tsp extra-virgin olive oil
1 tsp lemon juice
½ tsp wholegrain mustard

method:
1 place sweet potato and 60ml (1/4 cup) water in a microwave safe dish. Cover and microwave on High (100%) for 2-3 minutes or until potato is tender. Drain. Set aside to cool.
2 combine sweet potato, rocket, tomatoes, snow peas, avocado and salmon in a medium bowl. Combine olive oil, lemon juice and mustard. Drizzle over salad to serve.
