A simple, no-cooking required lunch option that is no fuss, full of nutrients and super tasty always gets my big tick of approval.

125g can chickpeas, rinsed, drained
2 tsp lemon juice
20g feta cheese
1 (40g) wholegrain wrap
20g baby spinach leaves
1 small carrot, grated
50g cooked beetroot, sliced
1. Using a fork, mash chickpeas, lemon juice and feta in as medium bowl, keeping some texture. Season with salt and pepper.
2. Place wrap on a clean work surface. Place spinach leaves down centre of wrap. Top with chickpea mixture, carrot and beetroot. Fold to enclose filling.
