RAW CHOCOLATE MOUSSE.
Play the ultimate trick on your tastebuds with this delicious, velvety and healthy substitute to chocolate mousse.

2 ripe avocados, peeled and stone removed
30g (¼ cup) cocoa or cacao powder, sifted
90g (¼ cup) honey or pure maple syrup (see Tip)
1 ½ tsp vanilla bean paste
80ml (⅓ cup) coconut yoghurt
1. Place the avocado flesh, cocoa powder, honey and vanilla in a food processor and process until smooth. Add the coconut yoghurt and process again until smooth and creamy, adding a little extra yoghurt if too thick.
2. Spoon mousse into 4 serving dishes. Cover and refrigerate until chilled. Sprinkle with a little extra cocoa powder to serve.
TIP: it is essential to use ripe avocados in this recipe, to get a smooth and luscious texture. For a vegan version you can substitute the honey with pure maple syrup or rice malt syrup.
