PROTEIN PANCAKES.

Ingredients.

1 large banana

2 eggs

70g (3/4 cup) cup rolled oats

30g (1 scoop) protein powder

Fresh strawberries, hulled, sliced

Maple syrup, to serve

 

Method.

1 Place banana, eggs, oats and protein powder in a blender or food processor and process until a smooth batter. This will take 1-2 minutes. Transfer mixture to a jug.


2 Heat a small non-stick frying pan over medium-low heat and lightly spray with oil. Pour one-quarter of the batter into the pan to make one pancake. Cook for -1-2 minutes or until bubbles start to appear on surface. Carefully flip and cook for another minute or until golden and cooked through. Repeat to make 4 pancakes.


3 Serve pancakes, topped with the strawberries and maple syrup.
