Prep: 5 minutes
1 large banana, sliced, frozen (see tip)
150g frozen mango
2 tbs coconut milk
2 tsp lime juice
1 tsp finely grated lime zest
1. Process banana, mango, coconut milk and lime juice and zest in a food processor until thick, creamy and smooth, occasionally scraping down sides of processor. This will take about 3-4 minutes.
2. Serve immediately or place in an airtight container and freeze until needed. Remove from fridge to soften for 5-10 minutes before serving.
Tip: Cut bananas into chunks, place in a single layer in an airtight container, cover and freeze for 3-4 hours or until frozen.
