halloumi, chilli lime avocado & veggie wrap.

ingredients.
¼ avocado, mashed
Pinch of dried chilli flakes
1 tsp lime juice, plus extra squeeze of lime juice
75g halloumi cheese, thickly sliced
1 wholegrain wrap
Handful of baby spinach leaves
1 small Roma tomato, sliced
1 small carrot, peeled, cut into thin matchsticks

method.
1 Combine the avocado, chilli and lime juice in a small bowl. Season to taste.
2 Heat a small non-stick frying pan over medium-high heat and lightly spray with olive oil. Cook halloumi for 1-2 minutes each side or until golden. Squeeze over a little extra lime juice.
3 Place wrap on a clean work surface and spread avocado down centre of wrap. Top with spinach leaves, the halloumi, tomato and carrot. Wrap to enclose filling and serve immediately.
