Easy hummus

400g can chickpeas, rinsed, drained

1 garlic clove, crushed

1 tsp ground cumin

½ tsp ground coriander

1 tbs tahini

2 tbs extra-virgin olive oil

1 tbs lemon juice

1-2 tbs warm water


1 Process chickpeas, garlic and spices until well combined. Add tahini, olive oil, lemon juice and enough water until a smooth creamy consistency. Season to taste with salt and pepper.


Tip: left over hummus will keep in an airtight container in the fridge for 3-4 days.
