CHICKPEA BRUSCHETTA.

ingredients.

125g can chickpeas, rinsed, drained

1 tsp lemon juice

1 tsp tahini

50g cherry tomatoes, quartered

½ avocado, diced

1 tbs coarsely chopped fresh herbs (such as parsley, mint or basil)

2 slices wholegrain bread, toasted

 

method.

1 Place chickpeas in a small bowl with the lemon juice and tahini. Lightly mash with a fork, leaving some texture. Season with salt and pepper. Add tomatoes, avocado and herbs and stir to combine


2 Top toast with chickpea mixture. Serve.
