2 x 60g each whole meal pita breads
2 tbs basil pesto
25g baby spinach leaves, plus extra to serve
150g cooked, skinless BBQ chicken, shredded
150g cherry tomatoes, halved
½ red capsicum, thinly sliced
1 small zucchini, thinly sliced
1/2 small red onion, thinly sliced
½ cup finely grated cheddar cheese
1 preheat oven to 200ºC/180ºC fan forced, line a baking tray with baking paper. place pita breads on prepared tray. spread 3 teaspoons pesto over each, top with spinach leaves, chicken, tomatoes, capsicum, zucchini, onion and sprinkle with cheese.
2 bake in preheated oven for 12 minutes or until golden and crisp, swapping trays halfway through cooking time. serve with extra spinach leaves.
