breakfast couscous.

ingredients.
60ml (¼ cup) apple juice
¼ tsp ground cinnamon
50g (¼ cup) wholegrain couscous
2 tsp pepitas, sunflower or hemp seeds
Natural or coconut yoghurt, to serve
Fresh or frozen berries, to serve

method.
1 Combine apple juice, cinnamon and 2 tablespoons water in a small saucepan and bring to the boil over medium heat. Add couscous, remove from heat, cover and set aside for 3 minutes or until liquid is absorbed. Fluff and separate grains with a fork. Stir through seeds.
2 Spoon couscous into a bowl. Top with yoghurt, berries and drizzle with a little honey or maple syrup if you wish. Serve.
