The perfect balance of sweet and savoury, this healthy cookie recipe hits the spot for morning tea, afternoon snack or dessert every time. The most addictive cookies you'll ever whip up, you've been warned.

Ingredients.
150g roasted unsalted almonds
50g pepitas
40g shredded coconut
1 tbs chia seeds
1/3 cup craisins, chopped
1 tsp baking powder
1 egg
1 tbs macadamia oil
1 tbs pure maple syrup
1 tsp vanilla extract
Method.
1. Preheat oven to 160°C/140°C fan forced. Line a baking tray with baking paper. Place almonds and pepitas in a food processor and process until finely ground. Transfer to a bowl. Add the coconut, chia seeds, craisins and baking powder and stir to combine.
2. Whisk the egg, oil, maple syrup and vanilla together in a small jug. Add to almond mixture and stir until well combined.
3. Place heaped tablespoons of mixture onto prepared tray, 2-3cm apart and shape into rounds, approx. 1cm-thick. Bake for 10-12 minutes or until light golden. Set aside to completely cool on tray.
TIP: store cookies in an airtight container in the fridge for up to 1 week.
